Missing a creamy red sauce for your pasta? The addition of cashews to your favorite red sauce gives it a creamy taste and texture without the dairy. I love this recipe with the earthy roasted cauliflower and the spicy diavolo sauce. Try it… you won’t be disappointed!
Start by mixing your cauliflower with a little oil, salt, and pepper before roasting.

You won’t have to touch them much while they roast in the oven. Don’t be afraid of a dark color when they roast.

While they are roasting, toss all the other ingredients into the blender and blend until smooth. I used salted cashews so I reduced the salt. Make any adjustments you feel necessary for your taste buds.

I like to warm up my sauce since my gluten free pasta can fall apart if I stir it too much to cover it with sauce. If you are using “regular” pasta, you can combine the pasta and sauce in the pan after you drain the pasta to coat it evenly.

Then cover your favorite whole grain pasta (brown rice, quinoa, chickpea are all good options) with sauce and top with cauliflower. YUM!

Enjoy!
