Horchata is a Mexican beverage typically made from rice, milk, and sugar. It is very refreshing to sip over ice or, like my husband, to make lattes. I made some modifications to this drink to make it disbyosis friendly without giving up that refreshing quality. While this recipe isn’t hard, it can be a little time consuming but worth it to hit that creamy or sweet craving.
Start by rinsing your rice and then combining it with 4 cups of filtered water and the cinnamon sticks. Allow to soak overnight or even longer.

The next morning (or whenever you have time) remove the cinnamon sticks and put the water and rice in a blender. Blend it on high for 1-2 minutes until the mixture looks creamy and frothy. Be sure to hold the top while doing this. I have a Blentec and it still tried to leak out of the top!

Now comes the slightly time consuming part. You need to filter out the rice “pulp”. I used a fine mesh sieve on my first time through and it caught quite a bit of it. The second time I lined my sieve with cheesecloth and had to work in batches cleaning out the cheesecloth in between. This should leave you with about 3 cups of rice liquid. Now just add in your milk of choice, the vanilla, and the stevia. I don’t have a huge sweet tooth so my 2 drops of stevia was all I needed. You can adjust it to suit your sweet tooth. You can add cinnamon now too, if you’d like, but I find that it floats to the top anyway so I just wait until I pour it over ice to add that last dash of cinnamon.

Enjoy!

Ingredients
- 1 cup rinsed brown rice
- 4 cups filtered water
- 2 cinnamon sticks
- 1 cup coconut or almond milk
- 1-2 drops of stevia (or more to taste)
- 1 teaspoon vanilla
- ground cinnamon to top
Instructions
- Combine rice, water, and cinnamon sticks in a large container. Cover and let sit overnight (at least 8 hours).
- After the rice is done soaking, remove the cinnamon sticks and pour the rice and water into your blender. Blend on high for 1-2 minutes.
- Pour the blended mixture through a fine sieve and discard the solids. Pour the remaining mixture through a cheesecloth to remove and discard any additional solids. (I had to do this step in batches.) You should end up with about 3 cups of liquid.
- To the remaining liquid add the coconut or almond milk, stevia, and vanilla. Whisk and then adjust stevia to your liking.
- Pour over a glass of ice and sprinkle with cinnamon.
