I have never had a huge sweet tooth. I can eat an entire bag of potato chips in one sitting and my tongue be perfectly pleased. When I do crave sweets, though, I tend to want creamy things like custard and puddings and very rarely do I want them to be chocolate flavored. My husband cannot understand this about me as he would rather sit with a whole bar of chocolate than potato chips. Since I have already found a chocolate recipe for your sweet tooth, I wanted to find something creamier and less chocolate.
Enter the Pecan Pie version of chia seed pudding. Chia seed pudding is the easiest thing to make and is incredibly healthy for you. Chia means “strength” in the Mayan language and was used as food for the warriors in battle. It is said that one tablespoon could sustain them for 24 hours! Chia seeds are rich in fiber, protein, and Omega-3s. Shall we call them a superfood?
I have made this pudding to have for a quick breakfast that will hold you all morning or as a sweet treat for that 3 o’clock craving. This version is sugar free and made in minutes. The hardest part is waiting for it to be ready!
Start by whisking together the coconut milk, vanilla, almond extract, and 1 tablespoon of granulated sweetener.

Next whisk in your chia seeds and pour into individual containers. I used jars for the ease of transport to work or wherever but ramekins would work well too.

Cover and refrigerate overnight (or at least 4 hours). When you are ready to eat the pudding, chop up some pecans to sprinkle on the top. If you are feeling fancy, toast the pecans in a 350 degree oven for a few minutes before adding them to the pudding. It gives the pecans a deeper flavor.

This method will produce a pudding with a texture similar to tapioca. If that doesn’t appeal to you, add all the ingredients to a blender and blend on high until smooth (30 secs to 1 minute). Then pour into the containers and let chill for 4 hours or overnight. You will have a smooth textured pudding!
Enjoy!
